Spinach and Rocket Pizza From a Frozen Four Cheese Pizza

Frozen pizzas are very convenient today and can easily be found in many local supermarkets. As convenient as they are, the variety of frozen pizzas you find at the supermarket is usually not very wide and I find making my own pizza toppings at home quite rewarding and much more tasty than pre-made pizza toppings.

In this instructable, I will show you how to make your own toppings from a frozen pre-made four cheese pizza.

You Will Need

1 Frozen four cheese pizza

30g wild rocket

30g baby spinach

2 medium red jalepeno chilies (sliced into rings)

1 small red onion (finely sliced into rings)

a few black olives (sliced)

20ml red wine vinegar

700ml boiling water

Marinating the Red Onion

I like to marinate my red onions in red wine vinegar, since it gives the onions a softer texture, when cooked and it adds a nice tangy flavour. Pour 20ml of red wine vinegar on to the red onions or until they are submerged and let them sit for 10-15 minutes to absorb the flavour.

Steaming the Wild Rocket and Baby Spinach

To avoid burning the rocket and spinach on the pizza, you will need to steam them. This also makes it easier to place the spinach and rocket on the pizza. Put the spinach and rocket into a measuring jug and pour 700ml of boiling water into the jug. Stir the spinach and rocket to ensure that they are completely submerged. Let the jug sit for 10-15 minutes or until the rocket and spinach have wilted and drain the water.

Adding the Toppings

Now that all of your toppings are ready you can place them on to the pizza. I added the spinach and rocket first, before placing the chillies, onion rings and olives on top. Cook your pizza according to the instructions on the box and make sure to turn the pizza around halfway through the cooking time to get it evenly cooked on both sides.
