Spinach and Avocado Pesto

I've been trying to eat a bit healthier lately. I am miles away from a perfect diet but I do try to sneak in a few healthier choices into my meals. I had some spinach and an avocado that was about to go bad so I decided to improvise on supper tonight.

The ingredients you will need are :

- the pasta of your choice, cooked

- 3 cloves or garlic

- salt and pepper to taste

- 1/4-1/2 pound of spinach

- 1/2 cup of water

- 1/4 cup parmesan ( or nutritional yeast if you want to keep it vegan )

- 1 avocado

- 1 tsp oil

- fresh or frozen basil

Cooking the Garlic and Spinach

Roughly chop up the garlic and cook it in a pan with the oil. Be sure not to burn it, this can happen quickly and easily and it will taste awful. When the garlic is golden brown it's done. Next, add in the water and spinach and cook until it wilts.

I couldn't find fresh basil anywhere around where I live today. I decided to use the frozen stuff from one of those little ice cube tray looking things. I put 4 basil cubes, the avocado and parmesan in with the spinach and blended it with an immersion blender. The pesto is done!

Adding in the Pasta

Dump the pesto into your pasta. Stir it around on a low heat to thicken everything up and melt the cheese a bit. You're all done!! :)
