Spicy Vegan Caramel & Apple Dessert
This is a super easy dessert to make when your feeling a bit like a cosy yummy something sweet bake :) Perfect for vegans, vegetarians and everyone else as EVERYONE will love this!
Of course, you may use any fruit in the middle ... some ideas would be pears, berries, banana, figs... and then the nuts can be changed with pecans, pistachios, walnuts ... add raisins ... have fun and use your fave combinations.
Serve with custard, cream or ice cream.
Supplies
Ingredients
CAKE
2 cups Cake flour
1 cup Sugar
80ml Butter ( I used flora vegan butter)
1 teaspoon baking soda
1 cup milk ( I use almond)
2 tablespooons Flax seed powder (blend flax seed in your nutribullet)
1 tablespoon cinnamon
TOPPING
2 - 3 Apples (use your fave type)
Almonds (feel free to use whatever nuts you have or omit)
CARAMEL
1 1/2 cups Brown Sugar
80ml Milk (I used almond milk)
1 tablespoon Butter ( I used flora vegan butter)
ICING
2 cups Icing
Sugar Water
Line Your Tray & TURN ON Oven
First step in baking is always to turn on the oven, in this case to 350F or 180C.
Then line your tray ( mine is 25cm by 15cm) with baking paper or simply use a bit of oil to grease the pan.
Mix
Ingredients
2 cups Cake flour
1 cup Sugar
80ml Butter ( I used flora vegan butter)
1 teaspoon baking soda
1 cup milk ( I use almond)
2 tablespoons Flax seed powder (blend flax seed in your nutribullet)
1 tablespoon cinnamon
Simply add your ingredients to a bowl and mix for a minute or two until well combined.
Then add half of the batter to the lined tray.
Toppings
TOPPING
2 - 3 Apples (use your fave type)
Handful of Almonds (feel free to use whatever nuts you have or omit)
- Chop up the apples ( no need to peel but do core).
- Add the apple pieces to the batter.
- Top with the remaining batter.
- Sprinkle with the nuts
Place in the oven for 30 - 40 minutes or until a knife comes out clean.
Caramel
CARAMEL
1 1/2 cups Brown Sugar
80ml Milk (I used almond milk)
1 tablespoon Butter ( I used flora vegan butter)
- While your pudding is baking, make the caramel sauce
- Place the sugar and milk in a saucepan over medium heat
- Boil until it turns a pretty caramel colour like in my pics. Take off the heat.
- Add the butter and stir. Leave aside.
Icing
ICING
2 cups Icing Sugar
Water
Add your icing to a bowl and slowly add water to make a pour-able icing.
Remove From the Oven
After 30 - 40 minutes, the dessert should be cooked. Check by inserting a knife, it should look cooked but not dry.
Now ...
Drizzle over the caramel sauce
Drizzle over the icing.
Serve
Just like that you have an incredible dessert! Place in bowls too serve with either custard, ice cream or cream.
