Spicy Salmon With Avocado Cilantro Salsa

This dish takes very little time to put together, but tastes like you spent all day in the kitchen! We serve it with sides of rice and black beans, and even my kids love this dinner.

Ingredients:

2-3 pounds salmon, cut into serving-size pieces

2 Tbsp olive oil

1 tsp kosher salt

1/2 tsp pepper

1/2 tsp garlic powder

1 tsp coriander

1 tsp cumin

1/2 tsp paprika

1/4 - 1/2 tsp cayenne pepper (or to taste - I use 1/4 tsp when my kids are eating)

1/4 tsp onion powder

Salsa:

2 avocados, diced into 1/2 inch pieces

1/4 c diced red onion

1/2 bunch finely chopped cilantro

2 Tbsp lime juice

1 Tbsp olive oil

1/2 tsp kosher salt

1/2 tsp cumin

1/4 tsp pepper

Prepare the Salmon

Mix salt, pepper, garlic powder, coriander, cumin, paprika, cayenne pepper, and onion powder. Add olive oil and stir into a paste. Rub paste into salmon, and refrigerate salmon for one hour.

Make the Salsa

Dice avocado, red onion, and cilantro. In a small bowl, mix olive oil, lime juice, salt, pepper, and cumin. Pour over avocado/cilantro and stir. Refrigerate until ready to serve.

Cook Salmon

Preheat broiler. Cover a cookie sheet or broiler pan with foil and spray with non-stick spray. Put salmon on cookie sheet and place about 6 inches under the broiler. Cook for 4-5 minutes on each side, watching closely. Salmon should be cooked to 145 degrees.

Remove from broiler, top with avocado salsa, and serve immediately.
