Spicy Roasted Pumpkin Seeds

Just finished carving your Halloween jack-o-lantern and want to make use of the rest of the pumpkin? Seeking a healthier alternative to snacking on potato chips? Here's a quick and simple recipe for spicy roasted pumpkin seeds.

Ingredients

To prepare the spicy roasted pumpkin seeds, you will need:

  • One pumpkin
  • Olive oil
  • Cayenne pepper
  • Smoked paprika (regular paprika is a fine substitute)
  • Garlic powder
  • Salt

Preheat your oven to 400°F and set out a baking sheet/pan lined with parchment paper. Cut your pumpkin and half and remove all of the seeds from the rest of the "pumpkin" guts. Place the seeds into a colander and rinse them in cool water. Place the pumpkin seeds onto a layer of paper towels, and dry them by applying another layer of paper towels and pressing down on them until they are fairly dry.

Roasting and Seasoning the Seeds

Place the seeds onto the lined baking sheet/pan in an even layer. Roast the seeds in the oven for 15-20 minutes, until golden brown. Remove the seeds from the oven, and place into a mixing bowl. Drizzle with olive oil, and season to taste. Toss seeds to coat.
