Start by rinsing and cutting the chicken wings, however you choose, I recommend leaving it as full pieces as tiny pieces break into chunks while grilling.

Clean

Add some salt and turmeric to the chicken wings and clean it once again, this helps to give the chicken an initial flavor and is believed to reduce some fat content.

Prepare Lemon

Cut some lemons to extract its juice, the lemon juice would add the tangy flavor to the chicken and make it feel more natural for taste.

In a large mixing bowl measure out all the dry spices and ingredient (chilly powder, ginger-garlic paste, red pepper and chili flakes) and mix thoroughly.

Next mix in all the wet ingredients (vinegar, lemon juice, Greek yogurt) and stir well.

#2 Marinade

Add the chicken wings to the marinade and mix them around till they are all coated.

Allow the chicken to marinade in the fridge for a minimum of 1 hour but preferably a few hours.

Ready to Grill

Now that the chicken is marinated it is time time to start grilling, before we do that here is some things to follow to get the grilling process easier.

  1. Place the wings on a cooking rack in a sheet pan.
  2. This lets air circulate all around the chicken pieces so that they get evenly crisp.
  3. It also lets the fat drip away from the chicken, leading to crispy, crispy skin.

Grill It Up

And now it is time to grill the chicken, I'm using an electric grill but a coal or gas grill would be great if you are doing this outdoors.

  1. Preheat the grill to medium.
  2. Remove the wings from the marinade and pat them dry.
  3. Heat grill to high.
  4. Grill the wings for 15-25 minutes.
  5. Toss wings in a few tablespoons of oil and season with salt and pepper.
  6. Place on the grill in single layers and grill until golden brown on both sides and just cooked through, about 6 to 8 minutes per side.
