Spicy Egg Masala Curry

Eggs can be cooked in many ways. This is one of the recipes for making a spicy stew with boiled eggs. This egg masala curry can be served with rice, chapatis and parotta.

Boil Eggs

  • Boil eggs in a container separately
  • Once the eggs are hard boiled, remove skin
  • Make four deep cuts on the sides of eggs and keep aside.

Ingredients

  • Two onions chopped
  • Two tomatoes chopped
  • Five or six garlic cloves, finely chopped
  • Two teaspoons of red chili powder
  • One teaspoon of Cumin seed powder
  • One teaspoon of fennel seed powder
  • Half a teaspoon of Turmeric Powder
  • A pinch of Asafoetida
  • Two teaspoons of Coriander Powder
  • One teaspoon of Garam Masala Powder
  • Salt to taste
  • A Table spoon of cooking oil

Preparation

  • Heat a frying pan and add a tablespoon of cooking oil
  • When oil is heated, add chopped onions and garlic
  • Stir fry till onions turn golden brown
  • Add chopped tomatoes and cook till all liquid evaporates from the mix

Add Spices

  • Add all the spice powders and salt to the pan
  • Mix everything together in the pan till they are well blended
  • Add three glasses of water to the ingredients in the pan and mix well

Add Boiled Eggs

  • Allow the mixture in the pan to boil
  • Once the stew started boiling, add the boiled eggs
  • Cook till the gravy becomes thick
  • Transfer the cooked stew from the pan to the serving dish
