Spicy Egg Masala Curry
Eggs can be cooked in many ways. This is one of the recipes for making a spicy stew with boiled eggs. This egg masala curry can be served with rice, chapatis and parotta.
Boil Eggs
- Boil eggs in a container separately
- Once the eggs are hard boiled, remove skin
- Make four deep cuts on the sides of eggs and keep aside.
Ingredients
- Two onions chopped
- Two tomatoes chopped
- Five or six garlic cloves, finely chopped
- Two teaspoons of red chili powder
- One teaspoon of Cumin seed powder
- One teaspoon of fennel seed powder
- Half a teaspoon of Turmeric Powder
- A pinch of Asafoetida
- Two teaspoons of Coriander Powder
- One teaspoon of Garam Masala Powder
- Salt to taste
- A Table spoon of cooking oil
Preparation
- Heat a frying pan and add a tablespoon of cooking oil
- When oil is heated, add chopped onions and garlic
- Stir fry till onions turn golden brown
- Add chopped tomatoes and cook till all liquid evaporates from the mix
Add Spices
- Add all the spice powders and salt to the pan
- Mix everything together in the pan till they are well blended
- Add three glasses of water to the ingredients in the pan and mix well
Add Boiled Eggs
- Allow the mixture in the pan to boil
- Once the stew started boiling, add the boiled eggs
- Cook till the gravy becomes thick
- Transfer the cooked stew from the pan to the serving dish
