Spicy Crispy Roasted Chickpeas

These oven-baked chickpeas are the perfect on the go healthy snack that is full of fiber and protein. After one try this will be your favorite on the go snack.

Supplies

  • 1 can chickpeas (drained and rinsed)
  • 1-2 tbsp olive oil
  • 1/2tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

Preheat your oven to 400 degrees.

Using a strainer drain and rinse the chickpeas underwater.

Lay your chickpeas on a kitchen towel and pat lightly to dry, discard any skins that may fall off the chickpeas. Make sure your chickpeas airdry completely.

Line a rimmed baking sheet with parchment paper and spray with cooking oil. (my favorite is avocado oil)

Spread the chickpeas out evenly over the baking sheet.

Cook the chickpeas for 20-30 minutes stirring every 10 mins until golden brown.

While chickpeas are roasting make your spice mixture by combining spice ingredients in a small bowl, then set aside.

  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

Remove chickpeas from oven, while still hot place in a bowl

Add 1/2-1 tablespoon of olive oil and toss to coat your chickpeas.

Add the spice mixture and toss to coat your chickpeas.

Serve immediately!

You can store your chickpeas in an airtight container but note that the texture will become chewier and less crispy as the chickpeas sit.
