Spaghetti With Vegan Meat Balls

Hello Everybody,

Who's ready to go through this Instructable which is about journey of Italian taste.. Atleast i made near taste of it :P .. Don't worry guys you are in good hand.. These Spaghetti was tasting delicious it even surprised my guests because it nice flavouring.

I have made noodles, pasta, Penne and fusili before.. but this is first time with spaghetti

Ingredients

1) Spaghetti - 100 gms

2) Tomato - 1/2 kg

3) Onion - 100 gram

4) Ginger and garlic - small amount

5) Black olives - 50 grams

6) Green olives - 50 grams

7) Jalapeno - 30 grams

8) Oregano - 1 Tbsp

9) Tomato sauce (optional) - 1 tsp

10) Carrot - 200 grams

11) Mint leaves & Coriander leaves - each 1/2 cup

12) Red chilli sauce - 3 tsp

13) Soya chunks (Vegan Meat balls) - 1 cup (not shown in pic)

14) Himalayan Pink salt - As required

15) Chilli flakes - 2 tsp

Chopping

Since both my olives and jalapeno were sliced, I chopped tomato, onion, carrot and minced garlic & ginger

Soak

Ya before start cutting the vegetable, take a bowl with water and soak the soya chunks, keep it aside

Brown Onion

Add 3 tsp of Olive oil, put chopped onions and saute well for about 10 mins at medium temperature until it turns golden brown releasing strong flavourful smell. now add minced ginger and garlic

Tomato to Tomato Paste

Add chopped tomatoes. Sauté those tomatoes really well.. really well continuosly saute them for like 20 minutes until they looses the raw smell. Don't add water now, as water in tomato will release and make it semi liquid state.. Since no water, you have to keep sautéing so it doesn't get struck at bottom.

Pro Tip: Add little salt at this stage, it fastens the process

Spice It Up

Add oregano, Chilli flakes, pink salt and mix well

Carrot & Water

Once the tomato thickens and had become paste, add chopped carrots and add enough so the tomato is now in medium consistency

Add chilli sauce now.

After 10 Mins

Give it few mins now add olives and jalapeno mix well and add soya chunks which will be like sponge balls now add the soaked water too.

These chunks will absorb salt, so now you need to taste check the tomato base and adjust the salt as per your taste.

Add the spaghetti, even though my vessel was tall, but it was not tall enough.. Only first half of the spaghetti was inside the vessel.. Even though it was my first time, i gave few mins for the base spaghetti to turn tender or else i was about it break in two half.. Luckily it was not necessary.. These photos were taken in the interval of 2 mins.. Quite fast isn't it.. Always while you are waiting for it stir it very gently so that it doesn't get struck at the bottom

So first all spaghetti went inside vessel and then inside gravy and finally mended together.

Once it all goes inside, check whether it has enough water and cover it with lid, give it gap and stir frequently.. when it's done you'll know it.. add mint leaves and coriander leaves (couldn't get parsley here)
