2 cloves of garlic

1 can (400g / 14 oz) of peeled tomatoes

150g (5 oz) guanciale

100ml (about 1/3 cup) dry white wine

Salt, to taste

Freshly ground black pepper, to taste

Dice the onion, guanciale, and garlic into small cubes

Sautéing the Guanciale and Building the Flavor Base

Fry the guanciale in a pan over medium heat until it becomes crispy. Remove the browned guanciale from the pan and set it aside. Use the rendered fat in the pan to sauté the onions until translucent, then add the garlic and cook until fragrant.

Deglazing and Building the Tomato Sauce

Deglaze the sautéed onions and garlic with white wine, then flambé the wine carefully to burn off the alcohol. Once the flames subside, add the peeled canned tomatoes to the pan to begin forming the sauce base.
