Soyrizo Scramble With Black Beans and Jalapenos
A few weeks ago I was in San Diego to run a half marathon. I had an amazing breakfast at this restaurant after the race (I may have been under the influence of too much exercise and not enough food, but I don't think that's the only reason I thought this scramble was so yummy :) ). Ever since I've been wanting to re-create it, so here's my attempt.
Ingredients
You will need:
- 2 tablespoons of olive oil
- 2 cloves of garlic
- 1/4 onion
- 1/2 green bell pepper
- 1 package of soyrizo (I used Trader Joe's version)
- 4 eggs
- 1 can of black beans (I was lazy and again used a pre-cooked version from Trader Joe's, but you could make your own as well)
- 1 container of marinated sliced jalapenos (this is optional but recommended, I used Hatch)
- Tapatio (again, optional but recommended)
- 1/2 cup non-fat greek yogurt (optional, but recommended)
(serves 2 people, with leftover bell pepper/soyrizo mixture)
Heat Olive Oil and Saute Garlic and Onions
- Heat 2 tablespoons of olive oil in a frying pan over medium heat
- Crush the garlic cloves and add to the oil
In the mean time chop the onion.
- Add the onion, the oil, and garlic. Saute for 2-3 minutes
Bell Pepper and Soyrizo
- Chop the bell pepper and add to the onion/garlic mixture, let cook for an additional 3-4 minutes or until the pepper starts to soften
- Cut off a 8 inch piece of the soyrizo
- Squeeze the soyrizo out of it's casing and into the pan, discard the casing
- Mix well and keep cooking on medium heat
Eggs
- Scramble the eggs in a separate bowl
- Push aside the soyrizo/bell pepper mix to one side of the frying pan
- Cook the eggs on the clear side of the pan, when they are almost done add as much of the soyrizo/bell pepper mixture to them as you would like.
*Note: You will most likely have some of the soyrizo/bell pepper mixture left over unless you are cooking for more than two people, in which case you will have to up the number of eggs you are using but can get away with the same amount of soyrizo/bell pepper mixture.
Enjoy!
- Heat the black beans up (I used the microwave in this case)
- Add beans and scramble separately to plate
- Put jalapenos and tapatio on top of the scramble
- Put 1/4 of greek yogurt to side of beans and scramble
This was a pretty yummy dish, almost as good as the one I had in San Diego. I would recommend eating the beans, scramble, jalapenos, tapatio, and yogurt together otherwise the dish might taste a bit bland, as there isn't a whole lot of seasoning to the eggs other than what is provided by the soyrizo.
If I were to make it again I would probably adjust the bell pepper/soyrizo to egg ratio.
But overall a success!
