Soy-Garlic-Ginger Fried Chicken

Ingredients
Chicken
· Chicken Drumsticks
· 48oz Vegetable Oil
· 3 cups Cornstarch
· Salt & Pepper
Sauce
· 1/2 cup Soy Sauce
· 1/4 cup Mirin
· 2 tablespoons Brown Sugar
· 1/2 teaspoon Garlic Powder
· 1 teaspoon Ginger
· 2 teaspoons Cornstarch
· 1/4 white Onion, shredded
· 3 cloves Garlic Cloves, finely chopped
Step 1: Prepare the Chicken
Heat your vegetable oil using a deep fryer or tall pot to 340°
1. Pat dry your room temperature drumsticks and season with salt and pepper
2. Fill a medium sized bowl with 3 cups cornstarch and rub chicken in cornstarch until fully coated
3. Place chicken in a deep fryer or tall pot and fry for 15 minutes
4. Turn chicken using metal tongs and fry for 15 more minutes
5. Remove fried chicken and place on a plate with a paper towel
6. Lightly salt immediately after removing chicken from the fryer
*Option* You may begin preparing the sauce while the chicken is frying
Step 2: Prepare the Sauce
1. Shred 1/4 of a white onion into a metal bowl
2. Finely chop and add garlic cloves to the bowl
3. Add remaining ingredients to the bowl:
· 1/2 cup Soy Sauce
· 1/4 cup Mirin
· 2 tablespoons Brown Sugar
· 1/2 teaspoon Garlic Powder
· 1 teaspoon Ginger
· 2 teaspoons Cornstarch
4. Over medium heat stir sauce until stir until slightly thickened and remove from heat
Step 3: Baste and Serve
1. Baste chicken in sauce and serve with your choice of sides
