Southern Pimento Cheese Sandwich for One

When I was young, rainy days came with soup and pimento cheese sandwiches. My mother was raised in the south and this how she taught me to make pimento cheese sandwiches.

Supplies

One or two slice of sour dough bread.

One slice of tomato.

ΒΌ cup of sharp cheese (freshly shredded - not that bagged stuff).

1 ounce pimentos - drained and chopped.

1 tablespoon miracle whip

Prepare Ingredients

Place miracle whip, cheese, and pimentos into a dish.

Mix Ingredients

Use a fork to smash the ingredients. The bowl above shows the ingredients half way through the process - keep smashing.

Prepare the Sandwich

Place the tomato on one slice (or half) of the sour dough bread - salt to taste.

Place pimento cheese mixture on the other slice (or half) of the sour dough bread.

Add salt, pepper, garlic powder, and/or onion powder according to personal taste.
