Southern Baked Biscuits and Gravy

Biscuits and Gravy is a breakfast dish very common in the south. It is a family favorite! Usually made with sausage, we had to improvise and use bacon.

Supplies

Biscuit Ingredients

  • 2 cups of all-purpose flour
  • 1 TB of baking powder
  • 1 TB of salt
  • ⅓ cup of cold, unsalted butter
  • ¾ cup of milk

Gravy Ingredients

  • 4 thick slices of bacon
  • 1 cup of milk
  • ¼ cup all-purpose flour
  • salt/pepper to season

Making the Biscuits

  1. Combine dry ingredients in a bowl.
  2. Cut in the cold butter until it resembles small peas.
  3. Slowly add ¾ cup of milk and mix with a fork until the dough is just slightly sticky. Use more milk if needed.
  4. Remove the dough from the bowl and fold over 10 times on a floured surface.
  5. Flatten the dough using your hands until it is about 1 inch thick. Then cut out biscuits using a biscuit cutter (or circular cookie cutter).
  6. Bake bisucuits at 220c for 12-15 minutes or until golden brown while making the gravy below.

Making the Gravy

  1. Cook the bacon in a deep skillet over medium heat until crisp, about 10 minutes. Remove bacon to a paper towel-lined plate and keep the grease in the pan.
  2. Gradually stir flour into the grease so that no lumps form, then mix in the milk, continuing to cook on low heat, and stir until thickened.
  3. Crumble the bacon into the gravy and season with salt and pepper to your liking before serving.
  4. Pour gravy onto biscuits and enjoy :)
