Sourdough Coffee Cake
I have a severe weakness for coffee cake. Whether you have this with a hot coffee or tea, you're sure to enjoy this cake.
We've created this original recipe using the great health benefits of sourdough.
Let's take you through it.
Ingredients
You will need:
- 30 grams of Sourdough Starter
- 135 grams of flour
- 150 mls strong coffee
- 50 grams of butter
- 80 grams of sugar
- 1/4 heaped teaspoon of baking soda
- 2 teaspoons of vinegar
Icing
- 4 tablespoons of coffee (or 2 teaspoon of coffee essence)
- 4 tablespoons of icing sugar
Combine the water, flour and sourdough starter together.
Coffee Break
Pour the strong coffee into a mixing bowl and stir it around. Scrape down the edges of your bowl and leave it to ferment on a bench with a damp cloth to cover it overnight or until it starts to get bubbly.
Sugar and Baking Soda
Move your fermented dough into a clean bowl, then mix in the sugar and baking soda.
Butter
Melt the butter and pour most of it into the cake batter, remembering to keep a little left over for the next step.
Remaining Butter
Pour the cider vinegar into the remaining butter, then mix this into your dough mixture.
Bake It, Baby
Pour the mixture into a baking dish and cook at 180C (360F) for 35-40 minutes or until brown.
Iced Coffee
Make up a delicious coffee icing by combining 4 tablespoons of coffee (or 2 teaspoons of coffee essence) with 4 tablespoons of icing sugar. Mix to smooth consistency then generously coat your sourdough coffee cake.
