Soup Courgettes Curry Coco
In this instrucables, I'll explain how to make a tasty soup made of courgettes, coconut milk/cream and curry.
The taste of this soup is very balanced, not too salty, not too sweet, it can please to everyone (and also kids !).
We'll also do some oven bread (baguette) with olive oil that is usually use in France to eat with the soup.
List of Ingredients
To make this soup, you'll need :
- 1 Courgette (ball) or 2 classical green courgettes
- 20cl (6.7Oz) of Coconut milk
- 20cl (6.7Oz) of Coconut cream
- 1 tblsp of Curry paste
- 2 Onions
- 2 Garlic cloves
- 2 tsp of chicken broth
- 700ml (23.6Oz) of water
- Olive oil
- Salt & Pepper
- 1/2 baguette (french bread)
- Different cheese (to eat with the soup)
Preparation
1. Wash the courgette
2. Remove the seeds (and also the peel if you want)
3. Cut it in a small cubes (around 2cm)
Cooking
4. Cut the onions and garlic in small pieces
5. Warm the olive oil (around 3 tblsp) at medium heat
6. Pour and sauté the onions and garlic in the olive oil untill their colors change to light brown (it takes around 10min)
7. Add the courgettes and let it cook, at medium heat for 10min.
8. Add 20cl (6.7Oz) of coconut milk and stir
9. Put 1 tblsp of curry paste
10. Pour 700ml (23.6Oz) of water with 2 tsp of chicken broth
11. Let it cook for 30min (without boiling)
Prepare the Baguette (bread)
During the cooking of the courgettes :
12. Pre heat the oven at 180°C (350°F)
13. Cut the baguette into 3cm (1.2in) sections
14. Pour a small quantity of olive oil on each section
15. Add salt
16. Put in the oven for around 10min (the color has to turn to light brown)
Finish the Soup
17. With a sticky blender, mix the soup and adjust the time of mixing at your convenience (longer time gives smoother soup)
18. Add 20cl (6.7Oz) of coconut cream
19. Stir gently
Time to Eat
20. Adjust seasoning (salt & pepper)
21. Serve the soup immediately with the bread and cheese
Extra advice : Take a small piece of cheese, put in on a bread section, dunk into the soup and eat !
