Soft Pretzel Bites
In this instructable, I will show you how to make soft pretzel bites.
Ingredients
For this recipe, you will need:
4 1/2 c all-purpose flour
1/2 c baking soda
6 tbsp unsalted butter, melted
1 tbsp vegetable oil
2 tbsp light brown sugar
1 pack of active dry yeast
coarse sea salt
2 1/2 tsp salt
1 1/2 c warm water + 1 tbsp water
1 egg
Yeast Action
In a large bowl, combine 1 1/2 c warm water, brown sugar, yeast, butter and let set for five minutes.
5 Minutes Later.....
Now add in the salt and flour and mix in until your dough is formed.
So Kneady
Remove the dough from the bowl and knead for a few minutes.
Don't Miss a Spot.
Coat the sides of a large bowl with vegetable oil, then place the dough in the bowl, coating all sides of the dough with the oil and cover the bowl.
Proof It!
Place in an oven that is not preheated, but does have the oven light turned on. Proof dough in oven for an hour.
Rollin' & Cuttin'
Remove the dough from the oven and roll it out.
Cut the dough into bite-sized pieces.
Be Careful!
Bring 3 qts of water to a boil, and slowly add the baking soda to the water (add too much at once, it will boil over).
Put a few of the pretzel bites in (about 10) boil for 30 seconds and remove the bites with a slotted spoon.
Place the bites (spaced apart, not touching) on a baking sheet covered with parchment paper and sprayed with non-stick cooking spray.
In a Small Bowl
Mix the egg with 1 tbsp water.
Get Out That Brush
Coat your bites with the egg wash. Top the bites with the coarse salt.
Bake!
Place in an oven that's been preheated 425° for 10 minutes, or until golden.
