I grew up on burritos and tacos. We used to go to this place called Pancho Villa's in Astoria NY.
They're long gone but I still need my fix.....
We'll start with a couple of different fillings..

This is easy.
strips of chicken breast, bell pepper, and onions.
Sprinkle some Teriyaki sauce on it and your good.
I also add Lime Ponzu.
Stir fry in Olive oil and you're done....

But if I'm in a hurry I just sprinkle a little Mirin and Lemon Ponzu on the meat as its cooking.
Add a few sauted mushrooms for good measure... Works great as a Philly cheese steak too.

Lamb shanks. Great in a stew and leftovers are better in a taco...
Simple to make too just brown a couple of shanks in a dutch oven and then remove them from the pot.
Add the classic French Mirepoix, onions-celery-carrots, or the Italian soffritto, or Spanish sofrito, if you prefer.
Add a small pat of butter to help it along. After a couple of minutes add a cup of red wine and 2 cups of tomato sauce.
Return the shanks to the pot and add enough water to cover them. Sometimes I add more wine to cover them....
In 2-3 hours you should be able to pull the meat away from the bones easily.

Now that you have your fillings get some taco shells, taco bowls, flour or corn tortillas or just a soup bowl....
Make some pickled red onions. Just put some sliced red onions in a jar with half water and half apple cider vinegar. In a day it will turn the onions bright red. In a week they're even better.
I make Pickled Jalapenos too but lately I have just been buying them in the store since I go through 6-8 jars a year....
Another great addition is roasted broccoli. Just wash your broccoli then sprinkle on some lemon juice and parmesan cheese then you roast in on a sheet tray for 10 minutes at 450.
Sautéed Spinach in garlic and Olive oil is nice and easy too.

Add a little lettuce, pico de gallo, salsa verde, sour cream, raw onions, or whatever you like....
Served best with milk or alcohol to cut the heat....
I prefer a hard raspberry / apple cider. Sour Cherry cider should be in season soon too. but then again just a Corona will make me happy......
