Slow Cooker Pozole - Best Mexican Dish Ever
Pozole is a traditional Mexican dish that was created by the Aztecs. It´s like a soup, made with hot pepper salsa and chicken (or pork) broth. It's not only delicious, but nutritious too. A single dish has protein, vegetables, carbs and lots of flavour.
If you´ve never had Pozole before, but you like Mexican food, you should try it. It has all the flavors of the traditional Mexican cuisine. I believe this is the best Mexican dish and I´m from Mexico, so I´ve eaten a lot of authentic Mexican food.
I created this slow cooker version that the prep time takes less than 10 minutes but it still has all the flavour of the traditional pozole. Because even if you are a busy person, you deserve more than Mac and cheese and frozen food for dinner!
Gather Your Ingredients
I´ve found all the ingredients in Mexican/Latin stores in USA and Canada.
- 11 cups of water
- 5 cups of pozole corn (you can find this special corn at a Mexican/Latin store, they sell it canned)
- 4 chicken breasts
- Skinless and boneless
- 2 tbsp oregano
- 3 tbsp chicken broth powder
- 6 guajillo chili pods
- 2 pasilla chilli pods.
- 2 limes
- 2 cups thinly sliced lettuce
- Salt
- Pepper
Prepare the Hot Peppers
If you haven't had these hot peppers before, let me tell you that these are the best. They give a lot of flavour without being hot. This pozole can be eaten by kids, and if someone in your family likes spicy/hot food just add to his dish powdered cayenne pepper.
To make the base of the soup first cut the top of the peppers, open them and take out the seeds. Boil 3 cups of water. Put them onto the water for 3 minutes. Discard the water where the peppers boiled.

Take the hot peppers out of the water and put them in a blender. Blend them with a cup of fresh water.
Put everything in the crockpot Start with the blended peppers. Now add the rest of the water (7 cups) and the powdered chicken broth. Taste it and add salt and pepper if necessary.
Add the Rest of the Ingredients
Now add everything else. I buy the corn in a can, it has to be drained and washed before putting it into the crockpot.

Set the crockpot in high for 3 hours, or low for 7. I'm sure you've used your crockpot to cook poultry. So feel free to change the cooking time. As long as the chicken breasts are fully cooked, everything else will be ready. Now enjoy the rest of your free time because you just made an amazing dinner in less than 10 minutes.
When the pozole is ready, shred the chicken breasts, they are so juicy and full of flavour because they were cooked in the pepper´s sauce.
Serve it in this order: broth with corn, shredded chicken, lettuce. It´s also common to ganish with sliced radishes. Each person can add lime and oregano (and powdered cayenne pepper if they want it spicy/hot).
