Skinny Tator Tot Breakfast Bake
First off, I think tator tots are pretty amazing little bundles, so when I found a recipe on Pinterest for a Tator Tot Breakfast Bake and I thought, I’m In! And that recipe, which is from Bubblecrumb.com is really good, but with way too much fat and cholesterol, so I came to the rescue and lightened it up with great results! Mine calls for egg substitute, turkey sausage and veggies to you won’t blow your diet right away in the morning.
Here is what you will need to put it together:
1/2 bag of Tator Tots
2 1/2 cups Egg Substitute
5 Pre-Cooked Jimmy Dean Turkey Sausage Patties, or 1 1/4 cup crumbled turkey sausage
1/2 Onion, chopped
1/2 Red Bell Pepper
1 cup sliced Mushrooms
1 cup Shredded Cheddar Cheese
1 Tbsp. Olive Oil
1 tsp. Dry Mustard
Salt and Pepper
First, preheat the oven to 400 degrees. Spray a 8×8 casserole dish with non stick spray. Arrange the Tator Tots in the bottom of the dish and season with salt and pepper. Bake for about 15 minutes until they are golden brown.
While the Tots are browning soften the onions, peppers in a saute pan, about 5 minutes, add the mushrooms and cook for 2 minutes more.
If you are super lazy like me, microwave 5 frozen turkey sausage patties according to package directions, and ground them up with a fork. Alternatively, you can cook some turkey sausage into crumbles.
When you take the Tator Tots out of the oven lower the heat to 350 degrees.
Then just assemble the dish as follows: Layer the turkey sausage veggies over the Tator Tots. then Mix the egg substitute and dry mustard together and pour over the dish.
Add the cheese on top.
Cover with foil, and bake for 45 minutes, then uncover and bake for another 30 minutes. Delicious!
Ok, bonus recipe time: If you have leftovers the next day, heat up a slice, crumble it up a little bit with a fork and put an over easy egg on top! The runny yoke soaks into the dish and it is seriously, over the top amazing…
