Sizzling Hot and Sour Soup

During the rainy and winter season, I make this soup very often. As this is my favorite soup recipe. So If you are looking forward to having soup, then here is one of the best vegetarian soup recipe for you. Soups are healthier and super easy to make. With few ingredients you can make this yummy, hot, sizzling hot and sour soup. Hot and Sour soup is a Indo-Chinese soup. As the name suggests , this soup with vegetables gets spicy taste from the chili sauce, black pepper and that tangy taste from soy sauce and vinegar. It gets ready in 30 minutes only. This soup tastes same as the restaurant one. I've been perfecting this recipe since a long time and have finally got it. Without wasting any time get your veggies and start making this.

Supplies

Supplies:

  • Butter.
  • Garlic.
  • Onion.
  • Green Chilies.
  • Cabbage.
  • Capsicum.
  • Carrot.
  • French Beans.
  • Spring Onions.
  • Salt.
  • Black pepper powder.
  • Corn Flour.
  • Vinegar.
  • Dark Soy Sauce.
  • Chili Sauce.

Chopping

  1. Wash and finely chop all veggies. (Cabbage, French beans, Capsicum, Carrot, Spring Onion).
  2. You can add subtract veggies as per your liking.
  3. Mushroom will go well with this soup.
  4. Finely chop 6-8 cloves of garlic and 2 green chilies. You can also add ginger if you like.
  5. Keep all things prepped.

Sautéing

  1. In a pan, Take 1 tbsp. of butter (You can use oil too).
  2. Adding butter will enhance the taste of the soup.
  3. Let it melt. In the butter add the chopped garlic and green chilies.
  4. Let it cook till the raw smell of garlic goes away.
  5. Add chopped onion.
  6. Fry it for a few minutes till the onions become soft. Don't make the onions brown.

Veggie Time

  1. Once the onions are translucent, add the chopped veggies (Cabbage, Carrot, Capsicum, French Beans, Spring onions).
  2. Add salt and Black pepper powder as per taste.
  3. Mix everything well.
  4. Cover and cook for about 4-5 minutes till the veggies get soft.
  5. After 5 minutes check if the veggies are cooked. if not cover and cook for another 3-4 minutes.
  6. Let the veggies be a bit crunchy. Don't overcook.

Water

  1. Add 2 1/2 cups of water and mix everything well.
  2. Let it come to a boil.

Sauces

  1. Add the following sauces to the soup:
    • 1 tablespoon of White Vinegar.
    • 2 tablespoon of Dark Soy Sauce
    • 2 Tablespoon of Red Chili Sauce.
  2. Mix everything well and let the soup boil.

Slurry

  1. Make the corn flour water slurry (2tbsp corn flour + 1/4th cup water).
  2. Add the slurry to the soup while continuously stirring it.
  3. Cook for another 2-3 minutes.
  4. Make sure there are no lumps formed.

Tadaaa! Our sizzling soup is readyyy.

Serve it hot and garnish it with some spring onion greens.
