Simply Savoury Chicken Stew

Chicken stew makes for great comfort food and it's really quite easy to throw together. The best versions will use leftovers and juices from a roast, but it can be just as delicious without.

Ingredients:

Cooked Chicken

Carrots

Potatoes

Corn

Celery

Onion

Garlic

Fresh Herbs (like thyme, basil, oregano, etc)

Optional: Chicken Gravy

Start by chopping up your carrots and potatoes then cover in water and set to boil. These take the longest to cook so they need to go on first - if you slice the carrots thinly and use big cubes of potato they should take about the same time.

Mince and mix your garlic, fresh herbs and any spices you want to use for flavouring. Add to the half-done carrots and potatoes along with the bits of cooked chicken. Keep boiling until the carrots and potatoes start to get tender.

Crisp Veggies and Gravy

The final ingredients to add are the vegetables you want to remain slightly crisp; like onion, celery and corn. If you're not using leftover roast chicken (and thus don't have extra juices to mix in) you may want to add either a half or whole package of chicken gravy for added flavour and thickness. Simmer for a few minutes more, then serve steaming bowls and enjoy!
