Cooking Crepes
I usually start heating up the pan by placing the skillet on medium low heat. You can play with the heat and find the desirable temperature.
I pour a little dab about the size of a nickel of canola oil in the pan and spread it around with a paper towel this also gets the excess off.
I scoop a little less than half a cup of batter and pour it into the pan.
As i pour the batter in the pan using a pot holder with my free hand I move the pan around to spread the batter evenly across the whole skillet.
I then place the skillet on the burner. The cook time will vary depending on how hot the skillet is. I usually flip the crepe after about 30 seconds or so. The edges will get crisp and the bubbles forming on the top surface of the crepe will pop and the liquid will start to become solid.
Work your spatula under the crepe and once you are under it gently loosen all edges and lift up and flip over.
after flipping the crepe the cooked side should turn a little golden color. Cook for another 30 seconds to a min. If original side was not cooked long enough alright to flip back over.
Then remove from skillet with spatula and place on plate for later consumption or a friends plate for immediate consumption.

Prepare for Eating
I usually spread some butter over the surface and then sprinkle some sugar over the top and than roll up the crepe and enjoy.
People put different spreads of jam or fruit in their crepe, lots of different options. You can add some chocolate sauce and powdered sugar to make this a delicious dessert crepe.
