Simple Soy Chicken Thighs

For 25 years we've relied on this simple recipe for a quick meal that is quite delicious and tangy. It is also easy to scale up for guests. This recipe serves four.

Getting Ready

You will need:

  • 4 to 6 Chicken Thighs with or without skin and/or bones. I prefer with.
  • About 1 cup of Soy Sauce
  • About 1 1/2 Tbsp Garlic Powder
  • About 2 Tbsp Parsley Flakes

And

  • 1 large Freezer Bag
  • Shallow Pan
  • Aluminum Foil

Putting It Together

Dump it all in the Freezer Bag, roll it around to thoroughly mix, squeeze out the air and put it in the refrigerator anywhere from 30 minutes to 8 hours. The longer the better for robust flavor.

Cook Those Thighs

Set your oven to 400 degrees F, Place the Aluminum Foil in the Pan (this is for easier cleanup) with skin side up and then bake for one hour. If you are using skinless/boneless, check for doneness after 45-50 minutes.

NOTE: These are also great on the grill. Cooks in about 45 minutes and makes for a different experience.

Serve one per person with your choice of sides. We haven't found anything that doesn't go well with our Simple Soy Chicken Thighs.
