Simple Pizza Sauce

I am a massive pizza fan and since buying a wood-fired oven I have been eating A LOT of it!
I have been making this simple no-fail sauce for a while as it is easy and super tasty!
Supplies
2x 400g cans of crushed tomatoes
1x 700g bottle of passata
1x brown onion
4x cloved of garlic
Fry

Roughly chop the garlic and onions and fry in a saucepan with a good slug a\of olive oil until it goes translucent. Keep the temperature low as we don't want it to brown.
Tomatoes

Add the passata and tinned tomatoes to the saucepan. I like to rinse the passata bottle out with a little red wine and add that to the sauce but it's up to you!
Bring the sauce to a simmer and reduce!
Time to Cook the Pizza

Once the sauce has reduced to a thick consistency you are ready to spread it on to your base. If the sauce is still lumpy feel free to give it a blend with what I would call a stick whizz(one of these).
If you need a recipe for a great base check out my instructable here and how to cook in a wood-fired oven here.
