Simple Microwave Vegetable Rice

Here is an easy to make recipe for a mixed vegetable rice.

Ingredients: for 1
1. Half cup rice
2. Handful of vegetables - to make 1 cup when cut. (I used carrots, string beans, tomatoes, capsicum and onions. You can use any you like).
3. 1 tsp vegetable oil
4. 1 cup water
5. Ginger-garlic paste - about a quarter tsp
6. 1 green chilli (You can also add any other spices you want like
cinnamon, cardamom, bay leaf, nutmeg, etc)

Soak Rice

Wash and soak the rice for 10 minutes

Cut Vegetables

Cut the vegetables to a decent size. They need not be small but should not be too big. About 2 cm should be fine.

Start With the Spices

Take a microwave safe dish (preferably glass) with a lid. If you don't have a lid, you can use cling wrap. DO NOT USE FOIL.

Put 1 tsp vegetable oil in the dish. Add the ginger-garlic paste and mix. Put in half a green chilli. (You can add more or less chill, as you like. Add any other spices now).

Microwave for 30 secs on high without the lid.

Add Rice and Veggies

Take the dish out of the microwave (be careful not to burn your hands - use gloves or a cloth) and add the vegetables. Drain the rice and add it too. Add 1 cup of water. Add salt to taste. Mix once.

Typically, the water should taste a pinch saltier than what you think is perfect.

Cook

Cover the bowl with the lid and microwave for about 15 minutes.

Done!

After 15 minutes, remove the bowl carefully, open the lid and stir to mix the rice and vegetables.

Tip

If the rice seems under cooked, close the lid and leave for 5 minutes. If the lid is not airtight, use foil or cling wrap. Cover completely to trap the steam.
