Siberian Hot Cheese Cakes

Hallo, baking lovers!

I visited my grandmother on Christmas holidays. She lives far away in the small village in Siberia.

In winter, when the temperature outside is minus 40, people visit each other and warm themselves with hot tea, cakes and cookies. Grandma knows a lot of recipes, and always meet me with this delicious hot cheese cakes! I want to share this recipe with you. You don’t need special ingredients and you can make them very quickly and simply.

This is a great cakes for warm family evenings with the hot tea or coffee!

So, let’s begin.

Ingredients

For Dough:

  • 2 cups of plain flour
  • 150 g unsalted butter or margarine.

It should be frozen in the freezer for 2-3 hours before!

  • Salt - 1/3 tsp
  • Soda or baking powder - 1/3 tsp
  • Sugar – 1 tablespoon

For Filling:

  • 0.5 kg of cottage cheese

Don’t take too large cottage cheese granules, it’s better to use fine or medium!

  • 3 eggs
  • 1 cup of sugar

Kitchenware:

  • Two deep cups or plates
  • Grater
  • Baking sheet
  • Baking Parchment Paper
  • Oven
  • Teaspoons and tablespoons
  • Glass 250 g

First, prepare two bowls and preheat the oven in 180 °C.

For the filling:

In the first bowl mix the cottage cheese, eggs and sugar.

For the dough:

Put the flour into the bowl, add salt and baking powder.

It’s better to sift the flour before using!

Slice the butter on a coarse grater and mix everything.

So, you have two bowls with the dough and with the filling!

Prepare the baking pan, place the baking parchment on the pan.

Divide the dough into 3 parts.

Spread 2/3 of it on the pan and flatten it with the help of a spoon.

Spread out the filling and flatten it.

Put the last part of the dough on the top and smooth it.

Don’t forget to preheat the oven to 180 °C!

Bake at this temperature until the edges become browned. There is no specific time, usually it takes about 50 minutes.

Next you need to cut the cake into pieces about 5 to 4 cm, but you need to do it while it hot!

This cakes is especially good with mint or thyme tea and the most delicious when it hot!

It’s also great and satisfying for breakfast with hot coffee.
