Shepherd's Pi

Before you eat your good crumble pie and recite 100 digits of pi, be sure to enjoy a yummy Shepard's Pie!

Get All the Ingredients

1 lb Hot Italian sausage

1 medium onion

2 cloves garlic

1/2 package frozen peas

1 can diced tomatoes

1 red pepper

2 tablespoons yellow mustard

1 teaspoon dried oregano

3/4 cup shredded mozzarella cheese

1 package instant potatoes or 1 1/2 pounds russet potatoes peeled and mashed

I did not have all ingredients on hand so I made some substitutions. I used green onions instead of a yellow onion. I also didn't have a red pepper so I substituted with a bag of chopped frozen green peppers.

Cook the Sausage

Brown sausage with garlic, pepper, and onion. Stir mixture to break apart meat as it cooks. Drain off excess fat and stir in tomatoes, peas, mustard, and oregano. Bring to a boil and reduce heat. Simmer for about 5 minutes to blend flavors.

Because I used the frozen peppers, I added those after browning the meat with the other ingredients.

Prepare the Potatoes

While the meat mixture is simmering, prepare potatoes according to instructions. Add 1/2 cup of the cheese to the potatoes.

Assemble the Pie

Spoon meat mixture into two separate pie dishes or one 9x13 casserole dish. Spread potatoes over the top of the meat mixture. Top with remaining 1/4 cup of cheese.

In honor of pi day I added some cheddar cheese in the shape of pi to the top.

Bake

Bake pie in 350 degree oven until heated through and cheese on top is melted (about 20 minutes). Remove from oven and enjoy! Be sure to set the ambiance with maybe the song of Pi or a cool LED display!
