Sheet Pan Chicken With Potatoes and Vegetables

Today I'd like to show you one of my recipes that I go with when I don't feel like spending a lot of time in the kitchen. I love cooking, no questions asked, but sometimes I just want to make it easy on myself.

So instead of cooking all the parts of the dish separately, why not do it all at once? One-sheet-pan meals are the perfect choice, really hard to mess up and the results are pretty much always great. Basically, you just "throw" everything on a sheet and then wait for it to bake in the oven. As simple as that :)

I used chicken drumsticks today, along with a solid amount of veggies and some potatoes.

Sheet Pan Chicken Ingredients

Here is what you will need for this recipe... all common ingredients that you likely have at home.

Base:

8-10 chicken drumsticks
1kg (2 lbs) potatoes
1 cup heavy cream

Veggies of choice, I’ve used:

2 bell peppers
2 carrots
2 red onions
2 cloves garlic
1 apple (not a vegetable I know:)
1 cup broccoli

Seasonings:

1 tsp crushed/ground caraway
2 tsp BBQ seasoning
1 tsp red paprika
olive oil
salt & pepper

Season the Drumsticks First.

I've used a bigger bowl, it's easy to mix all the spices this way. Put the drumsticks in and add olive oil, 1 tsp of salt, 1 tsp of caraway, 2 tsp of BBQ seasoning and 1 tsp of red paprika. The BBQ mix I've used is a mix of garlic and onion powder, black pepper and paprika. if you have a favorite one, go ahead and use it.

Place the seasoned meat in the middle of the sheet, the potatoes and veggies will go to the sides.

Now the Veggies.

You don't have to follow my choice of veggies! If you like some other types or don't want to use some of those I chose, feel free to use anything. Just pick the types that don't cook too quickly.

Cut them into larger chunks, season with olive oil, salt and pepper and add them to the sheet.

Potatoes Next.

Cut the potatoes into wedges, add olive oil, salt and pepper and mix. Place them on the remaining place on the sheet. Looks almost like a rainbow now, doesn't it? :)

Por a Cup of Heavy Cream Over the Ingredients.

Pour a cup of heavy whipping cream over all the ingredients. The cream will mix with the drippings from the meat and form a delicious sauce.

Time to Bake.

Cover the sheet with foil and bake for 30 minutes at 200C (400F). After 30 minutes, remove the foil and keep baking for 30 more minutes. If you use really large drumsticks, give it a few more minutes. Do a test with a fork, once the meet is fully cooked and tender, it's time for the last step.

Parmigiano Cheese Will Add an Extra Layer of Flavor.

Take the sheet out of the oven and sprinkle the top with a good amount of grated Parmigiano, like a handful or so. Now back to the oven and broil/gril for 5 or so minutes.

Garnish With Chives.

I love when there is some green color on my dishes, so I used some chopped chives for garnish. You don't have to do this, but i thought it looked nice :)

Time to Serve.

We're done, it's time to serve. Make sure you don't forget about the sauce that cooked in the sheet pan, it would be a waste to miss it.
