Seriously Good Quiche Muffins

I'm always looking for ways to package a lot of nutrition into convenient forms. It's a great way to combine a variety of ingredients that individually may not be eaten, but combined into a delicious form, will.

This ensures that everyone eats Well.

And this makes me Happy.

Ingredients

1.10 eggs

2. 4 pieces of bacon

3. Several leaves of swiss chard

4. half an onion

5. large clove of garlic

6. cream cheese, just under half a pkg

7. nutmeg, chili powder, salt. oregano

8. lime wedges, Tabasco

9. Oscar Wilde cheddar cheese - because, "The only way to get rid of a temptation ...is to yield to it."

Cook Bacon, Prep Add-ins

Yummy, fresh bacon, from my own acorn-fed pigs, cooked gently while covered, to preserve tenderness.

While cooking:

dice onion, mince garlic, chop swiss chard

shred cheddar, crack eggs into bowl, cut cream cheese into pats.

After bacon is sufficiently cooked, let cool, then chop into bits.

Saute Garlic, Onions and Greens

Using the same pan which the bacon was cooked in, saute the onions and garlic on medium/low, stirring occasionally. About 10 minutes.

Add chopped greens and turn heat to low. Folding, cook an additional 5 minutes. Turn heat off.

Ready Muffin Tins, Preheat Oven

You can use non-stick alone, but I prefer a barrier of muffin cups. Just a personal thing.

Set oven to 375 F.

Prepare Egg Mixture

Beat eggs. (from my own chickens, hence the atomic orange!)

Add in spices and salt.

Add in chopped up, cooked bacon.

Fill Cups!

Fill each cup with equal amount of garlic/onion/chard mixture.

Place one pat of cream cheese onto, depress lightly.

Ladle egg mixture into cups.

Spoon shredded cheese on top of that.

Dash some Tabasco sauce and lime juice onto each.

Bake about 25 minutes, no more, maybe a few minutes less.

Let Muffins Cool

Remove from oven immediately.

As you can see, I had a little spillage. No problem!

Let cool in tins about 10 minutes, then remove and place onto plate.

Slice in half for additional middle cooling.

Enjoy!!

These are amazing. Just a fantastic combination with the cream cheese, Tabasco, and lime.
