Seafood Stew in One Pot
This is simply delicious, and so easy! You can easily modify it to use what you have in your frig...I’ll give some alternatives below. You can shop for individual seafoods, clams, mussels, scallops, shrimp, etc. Or simplify even more with a 1-pound package of seafood medley from the freezer section of the market.
Ingredients
2-3 Tbs. vegetable oil (I used olive)
1 C of your favorite onion, chopped(I used leeks, but shallots or regular onions are fine)
2 stalks celery, chopped (optional)
1 thumb-sized piece of ginger,minced, about 1 heaping Tbs.
1 Tbs. curry powder
1 small chile pepper, chopped (I used a jalapeño)
2 cans full fat coconut milk
2 C mild broth (veggie, fish, or even water)
½ C raw rice
A pinch of saffron threads or ¼ tsp. turmeric
Juice of 1 lime and 1 tsp. zest
1 pound of seafood: clams, mussels, scallops, shrimp, calamari
Directions
Directions:
Heat the oil in a sturdy pot and stir fry the onion/leeks, ginger, curry powder, chile pepper. Cook, stirring occasionally, til soft, about 5 minutes. Add celery (if using), coconut milk, broth, rice, and saffron/turmeric, and bring to a boil. Then reduce heat to simmer and cook 15 minutes. Add lime juice and zest and seafood and cook 5-7 minutes. Check to see if it needs some salt. Serve with some crusty bread.
