Scrumptious Rum + Raisin Chocolate Flavour Cornflake Cookies

In this Instructable I will show you how I make these Rum + Raisin flavour Chocolate Cornflake Cookies with a white chocolate drizzle topping for a bit of panache:)

My first attempt and in all honesty they turned out really well and taste delicious, this is definitely a recipe for all chocolate lovers out there.

The Ingredients are pretty straight forward so with no further ado lets make some cookies.

Supplies

1 x Bar of Rum and Raisin chocolate.

1 x Bar of White chocolate.

Cocoa powder

Milk

Sugar

Butter

Water

Mixing the Cocoa Mix

I wanted to make the cocoa mix to sort of fill out the Rum and Raisin Chocolate mix, and to do this I didn't measure anything out, I just used 2 large spoon full's of cocoa powder and added 4oz's of margarine and a small amount of sugar say 2 oz's

I blended this together and used a small amount of milk just to thin it out a bit, I then put this to one side.

Melting the Chocolate

Taking the bar of Rum and Raisin chocolate, I broke the bar into small pieces and placed into a small Earthenware bowl, I then put a small amount of water into a suitable saucepan, and brought it up to just short of boiling, then turned the heat down.

I placed the bowl with the Rum and Raisin chocolate carefully into the saucepan and stood over it while it melted, breaking it down gradually with a wooden spoon, when fully melted I then added the cocoa powder mix and blended the 2 mixes together, I then turned the electric hob down to 1 and moved onto the next stage.

I had a plan to make around 10 of the Cornflake Cookies, and basically just guessed the amount as I tipped the cornflakes into a mixing bowl, then getting a towel, I carefully took the chocolate mix away from the water and placed the bowl onto a towel to dry the bottom, I then poured a good amount of the mix over the cornflakes.

I placed the remainder of the chocolate mixture back on to the saucepan of now warmish water.

Taking a wooden spoon I blended the cornflakes and the chocolate mix until all the flakes had a coating.

With some bun cases ready and waiting on a tray it was time to spoon generous amounts of the mix into the cases, I pressed down slightly with the back of the spoon as I went along to compact the mix into the cases.

With the rest of the chocolate mix, I followed the same procedure but this time I used Rice Crispies, the mix worked out really well and when all cases were filled we had 15 cookies! Bonus!

Now for the topping.

White Chocolate Topping.

I washed the bowl out from the previous mix and broke the white bar of chocolate into it, I was being a bit too ambitious here and used the whole bar, and same procedure as first mix breaking it down until all fully melted.

I didn't have a piping bag or anything so I took a large standard plastic bag and cut it down to a more manageable size, I then very carefully poured the mix into the bag.

I twisted the end of the bag and moved across to where the tray of cookies were, when in position using scissors I snipped a tiny piece of the corner of the bag, the mixture was still fluid so being very careful I made a simple zig zag pattern on each of the cookies, there was so much left that my wife had made a banana cake earlier, so I applied the same zig zag pattern to the cake.

The remainder of the white chocolate I piped back into the bowl, once hardened it would broke into pieces and consumed:)

There you have it, some not so hard to make Rum and Raisin flavour Cornflake and Rice Crispie cookies with a white chocolate piped zig zag decoration. Yummy!
