Farmer’s Delight Soup!

Hi! I am Jaanvi and this UNFORGETTABLE recipe of creamy Potato, Yam and Bacon soup! This recipe is not only the best thing you’ll ever smell, taste and see, but it is totally customisable! Instead of bacon, try more cream! Instead of cheese, Greek yogurt! So how do you make this scrumptious meal? Here are the supplies you’ll need for a single person (multiply for a larger number of people!

Supplies

You will need:

1 medium russet potato (but others will work too!)

1/8 cup of sharp cheddar cheese

A 3/4 cup of whole milk, warmed slightly

1small onion

2 slices of bacon (chopped into small bits)

2 tbsps of non-salted butter or bacon grease

3 cloves of garlic, peeled and minced

1 cup of chicken or vegetable broth

1/8 cup of all-purpose flour (around a tbsp and a 1/2)

1/3 cup of cooking cream, Greek yogurt or sour cream

2 pinches of salt, pepper and dried herb dill (you can adjust to preference though)

Fry the Bacon

Heat a large cooking pot over a medium-high heat. Add the bacon bits and cook until crispy, stirring occasionally. Transfer the bacon to a separate plate lined with tissue.

Sauté the Onions

Add onion in the same pan and sauté for 5 minutes, stirring occasionally, until soft.

Sauté the Garlic

Stir in the garlic and sauté for an extra 1-2 minutes, stirring occasionally, with the onions in the same pan.

Stir in the Flour

Stir the flour into the mixture and sauté for an additional 1 minute to cook the flour, stirring occasionally.

Add the Stock

Stir in the stock until combined.

Add Some More!

Add the whole milk and potato.

Potato Softening

Cook until the mix just reaches a simmer, before it begins to boil. Then reduce heat to medium-low, cover, and let it simmer for about 10-15 minutes (that was it for me) or until the potatoes are soft. Be SURE to stir the soup every few minutes so that the bottom does not burn. (The smaller you dice your potatoes, the faster your soup will cook.)If your soup is hardening or cooking too quickly, be sure to add some hot water!

Once the potatoes are soft and almost a ‘nearly mashed potato’ texture, stir in the cheddar cheese and Greek yogurt , sour cream or cooking cream, salt, pepper and earlier fried bacon bits. Taste and season with extra salt and pepper to your preference. Add small chunks of cooked yam to the surface of your soon-to-be-ready soup!

Plating

Plate to preference, whether in an old bowl with any old spoon, or a fancy way of plating with a soup spoon!
