Schezwan Fried Rice
Schezwan Fried rice takes the flavor of regular fried rice to another dimension. Slight sweet and spicy delicacy can be served with spicy Manchurian gravy. Easy to make if you have all the ingredients ready. Go for a toss in flame and enjoy the Chinese dish which is also Vegan.
Ingredients :
rice : 2 cups
Water : 3 cups
French Beans : 1 1⁄2 Cups , finely chopped
Carrot : 1⁄2 cup, Finely chopped
White Mushroom : 2 cups,
chopped Onion : 1 cup, finely chopped
Cabbage : 1 cup, shredded
Oil : 3 tbsp
Salt : 1⁄2 tsp ( for making rice ) 1⁄2 tsp ( frying vegetables )
Lime juice : 1 tsp
Soy sauce : 2 tsp
Schezwan sauce : 2 tbsp
Green onions : 2 or 3, finely chopped for garnishing
Schezwan Fried Rice
Method : 1. Cook basmati rice with water and salt , set aside and let it cool. 2. Wash and chop all vegetables finely. Heat oil in a pan and add all the chopped veggies including onion and garlic. Season with salt, cover and cook for about 10 mins in medium high heat. Stir them frequently so that they don’t get stick to the bottom. 3. Add Soy sauce and schezwan sauce and cook for 1 more min. 4. Add previously cooked rice to the pan and keep stirring gently as you don’t want the rice grains to break. Squish fresh lime juice over the rice and switch off the flame. 5. Garnish the rice with finely chopped green onions.

Note : Try to put minimum quantity of salt as soy and schezwan, both the sauces has reasonable amount of salt in it. You can always adjust the amount of salt at the end of the cooking.
