Savory Pumpkin Soup
Now that the weather is much cooler in my part of the world, I wanted to show you how easy it is to make a simple fall Pumpkin Soup. This soup will warm you up on the inside and make you feel nice a cozy because it is seasoned to perfection (of course if you like more or less salt adjust to your taste). I love the creaminess and smoothness to this soup. The only requirement I ask of you is to serve it up with a slice of nicely toasted Artisan bread (I love bread.... long story). I used homemade naturally leavened sourdough bread that I make at home and it goes perfectly with the soup. Ingredients and Tools
Ingredients
- 2 Tbsp unsalted Butter
- 2 Yellow Onions (that have been diced)
- 2 Cloves Garlic (minced)
- 3 tsp Salt
- 1 tsp ground Cinnamon
- ½ tsp ground Nutmeg
- ½ tsp ground Ginger
- 2 15 oz cans Pumpkin Puree
- 2 Cups Chicken Stock
- 2 Cups Water
- ½ Cup Heavy Cream
Tools
- Emulsion Blender
- Cuisinart Cast Iorn Dutch Oven
- misc. kitchen utensils
- ladle
Stove Top: Add Butter and Onions
Start off by melting butter in a heavy bottom pot on medium heat. Once the butter is melted add the sliced onions to the pan and cook stirring occasionally until caramelized (about 15 minutes).
Add Garlic and Spices
Add the garlic, salt, cinnamon, nutmeg, and ginger to the onions and stir constantly for one minute.
Scrape the Bottom of the Pan
Add in about ¼ cup of the chicken stock and use a wooden spoon to scrape any browned bits from the bottom of the pan.
Add Broth and Pumpkin
Next add the remaining chicken broth, water, and pumpkin puree and stir to combine. Turn heat on low and simmer the soup for 20 minutes.
Puree
Turn the stove off and use a handheld immersion blender to puree the soup.
Add Heavy Cream
To give it more creamy luxurious taste and feel add and stir the heavy cream into the soup.
Toppings
Top with extra cream and pepper plus a side of crispy bread.
