Savory Pumpkin Bruschetta
In this Instructable, I will demonstrate how to make a delicious easy bruschetta with homemade crostini exploding with flavor. This dish is perfect for parties and get-together's.
Supplies
- Crostini
- Pepitas (pumpkin seeds)
- Onion
- Lemon Juice
- Goat Cheese
- Walnuts
- Bacon
- Butter
- Rosemary
- Cayenne
- Nutmeg
- Cinnamon
- Fresh Pumpkin
Wash a Pie Pumpkin Thoroughly.
Cutting Your Pumpkin
Cut your pumpkin on both sides and scoop out the seeds and goop with a spoon. You can save the seeds for later for roasting if you would like.
The Bacon
Cook the bacon per package instructions.
Pumpkin Cubes
Cut the pumpkin into cubes.
The Crostini Butter
Fold Rosemary and nutmeg into butter that is room temperature.
The Walnuts
Chop 1 cup of walnuts.
Buttering the Crostini
Add Rosemary butter to top and bottom of crostini. Be generous!
Roasting the Pumpkin
Add diced pumpkin in roasting pan and cover with olive oil, salt, and pepper. Preheat oven to 400 degrees F and cook for 20-30 minutes.
Cooking the Crunch
Add walnuts, 1/2 cup pumpkin seeds, chopped bacon, Rosemary butter, olive oil, cayenne pepper, nutmeg, and cinnamon in a pan and simmer on medium heat until browned crunchy. Set aside to cool.
Making the Crostini
Add crostini to pan at medium heat and brown on both sides.
Putting It All Together
Add roasted pumpkin, crunch, goat cheese, and dash of lemon together. Mix carefully and add to crostini.
