Savory Dill Rolls
These rolls are light and herby with a yummy sweet and buttery top. They're perfect alongside any entree, and can be adapted to suit any taste. Different herbs can be used in place of the dill, or garlic or shredded cheese can be added if desired.

For dough (amounts are for only 4 rolls - if more are desired, just multiply the amounts):
Hardware -

- 1 cup and 1/2 cup all-purpose flour (divided)
- 3 tablespoons butter
- 3 teaspoons white sugar
- 1/4 cup warm water
- 1/2 teaspoon dry active yeast
- 2 tablespoons dried dill
- 1 teaspoon course sea salt
- 1 tablespoon butter (melted)
- 1 tablespoon honey
Hardware -
- Large mixing bowl
- Muffin tin or sheet pan (depending on which shape roll you'd like to make)
- Small pastry brush
- Mortar and pestle
- Towel
- Measuring cups and spoons
Making Dough
- Add sugar and yeast to warm water and stir to dissolve
- Cut butter into flour using finger tips until the mixture resembles very course corn meal
- Use mortar and pestle to grind salt and dill together to a fine powder
- Add yeast mixture and dill mixture into flour mixture and stir gently with fingertips to combine
- Add additional 1/2 cup of flour and mix until dough comes together. If the mixture remains sticky, add small amounts of additional flour
- Cover bowl with towel and place in a warm area to rise for 15 minutes
- Punch down and knead gently, then cover and allow to rise for an additional 15 minutes
Forming Rolls
To make clover-shaped rolls:
- Tear off small amounts of dough and roll into balls approximately the diameter of a quarter
- Place three balls into each cup of a greased muffin tin
- Cover the muffin tin and allow to rest for approximately 15 minutes
- Divide dough into 4 to 6 portions
- Roll each into a rope approximately 12 inches long
- Tie each rope into a loose knot leaving the ends out
- Tuck the end on top of the knot under, and bring the end underneath around the top
- Place on a sheet pan, cover, and allow to rest for approximately 15 minutes
Bake It Up
- Place in cold oven and begin heating to 375 degrees Fahrenheit
- Melt 2 tablespoons butter and combine with 2 tablespoons honey
- Once oven comes to temperature, remove rolls and brush gently with the butter-honey mixture
- Place back in oven and bake for approximately 15 minutes or until golden brown
