Sausage Stuffed Bread (aka Sourdough Sausage Mustard Bread)

You'll love this take on a traditional hotdog. Taking a tasty sausage (we've used a cheesy kransky) and wrapping it in dough, sprinking with grated cheese then baking until golden...this is the most wonderful bread surprise!

Ingredients - Sourdough Batter

Ingredients

  • 1 Cup of flour
  • 2 tbsp of sourdough starter Sourdough Starter
  • 150 ml water
  • 1 tbsp whole grain mustard

Making the Sourdough

Mix together all ingredients until the consistency is soft and sticky. Sourdough takes longer to work than yeast-based bread, so allow around 5 hours (the temperature in the room will affect timing) - you'll know it's ready when bubbles begin to appear.

To make this tasty sausage-stuffed bread you will need:

  • 1 Cup of fermented sourdough mixture
  • 50g butter
  • 2 sausages
  • 1/4 tsp baking soda
  • 2 tsp apple cider vinegar

This is enough for two breads...multiply the ingredients as required.

Pro tip: Make more than you think you'll need...they're tasty!

Mixing It Together

Take your sourdough and mix in the butter.

Then Mix Together...

...1/4 tsp baking soda and 2 tsp apple cider vinegar.

Taking Shape

We've used a small loaf tin and split it down the center using baking paper to separate the dough into two halves.

The Center Piece

In goes the sausage! Place the sausage onto the dough and gently press down, leaving around 1/3 of the sausage exposed (the dough will rise and cover the sausage during the baking process).

Bake It, Brother!

Bake the sausage bread at 180C (360F) for around 40 minutes until golden brown.

Remove from oven and add grated cheese, then bake for a further 10 minutes.

Pro tip: Add a light sprinkle of paprika, herb mix or sweet chili sauce for a spicy variation.

Remove from oven and lift out the stuffed sausage bread by grasping the baking paper.

Separate the two halves and place on a rack to cool.

The stuffed sausage bread has a wonderful outer crunch due to the sourdough. And the sausage center...oh Mama!
