Sausage, Potato and Kale Soup

Sometimes life can take unexpected turns. Breakups, moving, your favorite show leaving Netflix. But the right comfort food can make all your problems go away. This is why we have sausage, potato, and kale soup. This wonderful food can be cooked easily with hardly any work! You, your friends, and your family will fall in love with this soup!

Ingredients

To make your soup, you will need:

  • 4 potatoes
  • 1 small bunch of green onions
  • 1 lb of your favorite kind of pork sausage
  • 2 to 3 cups of chopped kale
  • Black pepper (Does not have to be a pepper grinder, I just find it easier)
  • 48 oz of chicken broth
  • 1 pint of half and half cream
  • 2 cups of water

P.S.: Half and half cream can be substituted with milk or heavy whipping cream.

Toppings (Optional):

  • Hot sauce
  • Cheese

Chopping Up the Veggies

The kale and the potatoes are in the name, so they must be pretty important. Take your veggies (potatoes, green onion, and kale) and begin to chop them up.

Potatoes: Chopping potatoes is tough. Cut them in half. Take one of the halves and cut that into thirds. Then chop the potatoes into smaller pieces. Seems like a lot, but it's quick if you know what you are doing.

Green Onions: Cut off the little stringy parts at the end. Chop the onions up about halfway.

Kale: Remove the stem. It is very bitter. Roll the kale up and then chop it up.

When you finish chopping everything up, put it in a bowl.

Put your sausage in a pan. It cooks quickly, so don't go away for too long! Brown it up. I didn't add anything to it, but you can if you want. Changing the recipe might be good! Especially if you didn't use flavored sausage. Once cooked, put it in the pot.

Cook It Up!

With the sausage already in the pot, you can add your water, cream, and broth. Stir that for a minute or two and add the rest of the ingredients. I used an Instant Pot to cook the soup, but any pot will do. Let cook for about 30 minutes under pressure and serve. You can add cheese or hot sauce (just a couple options!) or just eat it plain! It's perfect either way.
