Sauer Pork and Potatoes

The hardest part is opening the jar of sauerkraut! No seasoning needed, the sauerkraut provides all the flavor needed for this 3 ingredient dish. If you really like sauerkraut, use 2 jars. Proportions are pretty much up to you. Serve with crusty bread to soak up the juices.

Ingredients

2-4 lbs pork, cut up into even sized chunks

2-3 lbs small potatoes

1 jar of sauerkraut

Use large crock pot with a crock pot liner bag for easy clean-up and transfer to storage container.

Place washed potatoes in bottom of crock pot, place pork on top of potatoes, then top with the sauerkraut, cover, and cook on low for 8 plus hours, the longer the better, the potatoes and pork will be fall apart tender, the sauerkraut will cook down, flavoring everything underneath, creating a yummy broth.

If you are doing low carb eliminate the spuds.
