Santa's Pancakes
Our family has always held each holiday in high regard, although none more so than Christmas. Every Christmas Eve, my mother and I would rummage through our pantry, and gather all the ingredients to make Santa Claus his pancakes. We’d spend hours dancing and singing along to the radio as we’d prepare a heartfelt snack for Mr. Claus to enjoy once he finished placing presents under our tree. So, it is with a heart filled with excitement that I extend my family’s tradition to you. I hope you enjoy it!

Supplies
2 Cups all-purpose flour (sifted)
¼ Cup granulated sugar (add an extra 2-3 tbsp if prefer sweeter pancakes!)
4 tsp baking powder
¼ tsp baking soda
½ tsp salt
1 tsp cinnamon
1 ¾ Cup milk
1 lg egg (room temperature)
4 Tbsp butter (melted and cooled)
2 tsp vanilla bean paste (vanilla extract works great too! Use a 1:1 ratio)
Measure
MEASURE dry ingredients (sifted flour, sugar, baking powder, baking soda, cinnamon, and salt) and add to a large mixing bowl. Combine the ingredients with a whisk until they are all incorporated.
Add
ADD wet ingredients (milk, butter, vanilla, and egg) to dry mixture and stir until creamy.
Stir
1.) Batter will be thick, but should be able to flow freely off the utensil. If too thick, keep ADD a tbsp of milk at a time and stir until desired consistency is reached.
Grease
GREASE pan with butter or oil and place over medium heat. Caution to not let pan get too hot!
Pour
POUR batter into heated pan until desired size/shape is reached.
Flip
FLIP pancake with sturdy spatula once bubbles start to form on the top surface of the pancake. After flipped, allow to COOK until sides are golden brown. Repeat until all batter is cooked.
Serve
SERVE with warm with butter on top and with your favorite syrup or fruits.
TIPS!
Remove cinnamon and add chocolate chips or blueberries for a fun breakfast meal!
