Salmon and Cucumber Ciabatta Sandwich

If you are looking for an interesting sandwich, a salmon and cucumber ciabatta sandwich is a good choice. Personally, I love the combination of flavours. The smooth flavour of the cream cheese goes well with the smoky flavour of the salmon and the thinly sliced cucumbers add a perfect refreshing crunch. I also love how the black pepper and fresh dill bring out the flavours.

Ingredients

Ingredients:
1 piece of ciabatta bread
1 ready to eat salmon fillet
Light cream cheese
8 thinly sliced cucumber slices
Fresh dill
Black pepper

Stone baked Ciabatta bread is a perfect choice for this sandwich, since it is light with a delicious rustic flavour. I love the holey texture of the bread because it is unique and interesting and it goes well with the other ingredients. Use a large knife with a smooth edge and cut the bread lengthways.

Applying the Spread

Spread a decent amount of cream cheese on to both pieces of bread. I like to use cream cheese with slightly reduced fat for this part because it spreads over the holes easily.

Constructing the Sandwich

Cut the salmon in half and place one half on each piece of bread. Add the thinly sliced cucumber on top of the salmon. To season ,place small sprigs of fresh dill equally over the bread slices. Finally, ground black pepper over the sandwich to really perfect the sandwich.
