Salmon and Chickpea Stuffed Tomatoes

This recipe is a recent favourite of mine. I love chickpeas in almost everything and the salmon salad looks so cute stuffed in the tomatoes!

You could use crab meat or tuna if you don't have salmon.

Ingredients

You'll need:

  • 8 tomatoes
  • 1 can (540 ml) of chickpeas, drained and rinsed
  • 3 cans (3 x 150 g) of boneless, skinless salmon (or crab or tuna)
  • ¾ cup of mayonnaise
  • ½ cup of yogurt (or sour cream)
  • green onions
  • lime juice
  • garlic powder
  • onion powder
  • parsley
  • turmeric

Mix and Prepare

In a large mixing bowl, mix together the chickpeas, salmon, mayonnaise and yogurt. Add a dash of lime juice and the spices to taste (I sprinkle them in pretty liberally).

Chop the green onions and mix them in.

Cut the top off the tomatoes and remove the insides (save the scraps for another recipe).

Stuff the salmon salad into the tomatoes. Garnish with a bit of parsley.
