Salmon Ravioli
For date night with my girlfriend I decided these super simple ravioli, they taste great, are made with easily found ingredients and are nutritious as well. Also as said before super simple for the average boyfriend who knows little about cooking, as you may know I cook and like it but they seemed pretty simple for me taking the fact away I know how to cook. So why not make them so you can enjoy them with your beloved and have a great dinner.

Ingredients
For the Ingredients including the making of the pasta, the filling and the sauce you will need:
- 2 Cups of Flour
- 4 Eggs
- 1 Leek
- 1 Handful of Parsley
- Half a Salmon fillet (into ounces its 12 more or less)
- 1 shot of dry white wine (not pictured)
- Olive Oil (not pictured)
- Butter (not pictured)
Making the Dough
To make the dough you simply combine 3 eggs with 1-3/4 cups of flour. This is made on your counter or i a bowl like I did it by making a well in the flour and whisking the eggs carefully. After combining them you will have a consistency like the one on the first picture, if needed incorporate a couple more flour if it is to wet, after this you knead your dough for a couple of minutes and wrap it in plastic wrap and let it sit for 20 minutes.
Making the Filling
For the filling you cut your salmon into cubes and cut half of your leek in small and thin pieces, in a large saute pan you heat your leeks on medium heat until soft. Add your salmon cubes and remove your pan from the heat until your salmon has seared but is not fully cook.
In a food processor add your salmon and leeks with the parsley and the remaining egg, pulse until it forms into a paste.
Assembling
For the assembly of your ravioli you simply roll your dough out into thin sheets, I don't have a pasta machine that thins my sheets so I had to do it by hand and with a rolling pin, roll out a large sheet and dived it into four long strips. On two of the strips you place the amount of filling you want and close them with the remaining strips, after that using a fork you close your ravioli and make a pattern that looks really nice. This recipe yielded about forty ravioli but it really depends on the amount of filling and the size you make yours.
Firstly the amount of dough done in this Instructable had to be doubled to fit the amount of filling done. But that really depends on how thin you make your sheets and if you have the machine the amount of dough may adjust for your filling.
Cooking and Sauce
Cooking is the easiest part, you simply put to a boil a pot with salted water and add your ravioli for 3 to 5 minutes approximately. Thats it pretty simple.
For the sauce you add butter to a large saute pan or a wok as I used here and heat it, when melted you add your remaining leek and saute them until soft. After they are soft and your ravioli is cooked you simply add everything together and voila and some Parmesan to your sauce if you want and you are al done.
