Salad Bites

Salad bites are a fancy way to serve salad. They are fun to eat and they look nice. Here's how I make "bites" variations of three common salads.

Supplies

  • Toothpicks (one per portion)

For Goat Cheese Salad Bites

  • Small lettuce leaves
  • Goat cheese
  • Honey
  • Olive oil
  • Mustard
  • Walnuts

For Greek Salad Bites

  • Tomato
  • Cucumber
  • Black olives
  • Red or yellow pepper
  • Feta cheese
  • Pinch of salt
  • Pinch of pepper
  • Olive oil

For Tzatziki Bites

  • Cucumber
  • Garlic
  • White yoghurt
  • Dill
  • Pinch of salt
  • Olive oil

Goat Cheese Bites

  1. Clean the lettuce leaves and cut off the white part at the bottom if it's too hard to fold. Don't throw them away, use them for any other salad (or this same salad in a bowl). If the leaves are still too large, cut them in two lengthwise.
  2. Cut the goat cheese in small pieces. I use round slices that I cut in quarters
  3. Fold one of the leaves and stick it on a toothpick.
  4. Then stick on a piece of cheese and another folded leaf.
  5. Make as many bites as you want.
  6. Now for the vinaigrette - Put 1 portion of honey, 1 portion of mustard and 2 portions of olive oil in a bowl.
  7. Stir until smooth. It might look like it will take long if your honey is very solid but don't worry, the honey "melts" really fast in the oil.
  8. Drop the vinaigrette on the salad bites.
  9. Chop the walnuts and sprinkle them over the bites. I used ground walnuts because I still had some from making the beehive cookies.

Greek Salad Bites

Greek Salad, which is called Χωριάτικη [khoriatiki] is a great and healthy salad of many flavors and it makes for colorful bites.

  1. Cutcucumber, tomato and pepper in small pieces, dice the feta cheese and cut the olives in half.
  2. Stick one of each on a toothpick in the order you like.
  3. Sprinkle with salt, pepper and olive oil.

Tzatziki (Τζατζίκι) is probably mu favorite dip. I cook it often in summer with barbecue salmon or eat it just with bread. And as it turns out, it works as a bite as well!

  1. Cut the cucumber in small pieces and slice the garlic very thin.
  2. Stick the cucumber and garlic on a toothpick alternating between them.
  3. Chop the dill finely.
  4. Mix dill, yoghurt and a pinch of salt.
  5. Cover the upper side of the bites with the yoghurt-dill mixture and drop on some olive oil.
