Rustic Fruit Pizza
I had a hard time deciding on a name for this recipe. It could be a dessert pizza, but it could also be a breakfast pizza. Whatever you call it, it's a delicious pizza that is easily customizable. It's not too sweet, not too tart, and very creamy when warm.
Ingredients
1 pizza dough (store bought or homemade, I used store bought today or look here for a fast dough recipe)
1/4-1/2 cup of honey (adjust to your sweetness preferences)
1 container of mascapone (8oz, if you don't like mascapone, cream cheese also works)
Strawberries
Blackberries
Raspberries
1/4 cup Nutella (for after baking)
The Crust
Set oven to 425 and let heat.
I used premade dough from Trader Joe's and split it into two circular shapes. You can do this, or make one big rectangular pie. I don't have a pizza stone so I used an oiled sheet of tin foil on a cookie sheet.
I tried to build up the edges of the crust, to make a sort of wall to contain the mascapone, but it didn't go so well. I also forgot that this was what I was trying to do as I became distracted, but it still worked out okay.
When your dough and oven are ready, place the cookie sheet into the oven and bake the crust for 5-10 minutes. Remove from oven and let cool for a few minutes.
This is just to ensure your dough is cooked all the way through. Though when you add the cheese it can become a pain if you don't have a "well" for the cheese.
Toppings
While your dough is baking, add the mascapone cheese to a small bowl and then add honey and mix well. Maple syrup also works well here.
Wash and dry your fruit, slicing the strawberries.
Putting It All Together
When your toppings and crust are ready, use a spatula or something else that smears well, and spread the mascapone cheese on your pizza dough. If the dough is still hot and the pizza is bumpy (as mine is) you might have some trouble with the cheese melting and sliding off, but as you work, the cheese will settle down.
After the cheese is on, add your berries. I decided to make one strawberry pizza and one blackberry and raspberry pizza. There's no right or wrong way, you also don't need to use these berries, any fresh berries will taste great.
Baking
Set your oven to broil and bake your pizzas for 10-15 minutes, keep checking it periodically so your pizzas do not burn. Also adjust cooking time based on how thing your crust is.
Final Touches
For a final touch, you can drizzle honey or Nutella over your pie. If you use Nutella, heat it up for about 15 seconds in the microwave and then use a spatula to drizzle the chocolate.
Enjoy hot.
When completely cooled, wrap up or store in air tight container and keep in the fridge.
A toaster oven works much better than a microwave for reheating
