Royal Hawaiian Banana Bread

My friend Kacy shared this recipe with me. She said that her grandfather got it from the Royal Hawaiian Hotel in Waikiki, Honolulu. I tried the recipe and loved it, so I decided to share it!

Yield: About one loaf


Ingredients:

1 ½ cups of mashed ripe bananas

½ cup of granulated sugar

½ cup of brown sugar

2 large eggs

½ cup of shortening or vegetable oil

2 cups of all purpose flour

½ teaspoon of baking powder

1 teaspoon of baking soda

½ teaspoon of salt

1 teaspoon of vanilla

1 teaspoon of cinnamon

OPTIONAL: ½ cup of macadamia nuts or your preference of nuts

Preheat Oven

Preheat your oven to 350F or 180C. By preheating the oven, the process will go by much faster!

Grease the Loaf Pan

Grease you 2” X 4” X 8” loaf pan to ensure that the bread doesn't stick to the pan. You can grease it with some butter or cooking spray, either one works.

Mix the Sugars, Shortening (or Oil), and Eggs.

Take a large bowl and add the sugar, shortening (or oil), and eggs. Mix until combined. The batter should be a little lighter than when you initially started mixing.

Add the Mashed Bananas and Vanilla

Mix the batter until combined with a spatula.

​Add All the Dry Ingredients Into the Large Bowl

The dry ingredients include: flour, salt, baking powder, baking soda, and cinnamon. Gradually add in the flour to ensure there are no clumps. Mix until just combined. Do not over-mix. Your batter should be thick.

OPTIONAL: Mix the Nuts In

This is the time to add in your preferred nuts.

Pour the Batter Into the Loaf Pan and Bake for Approximately One Hour

Around 45 minutes in, stick a toothpick in your banana bread to see if it comes out clean. If it does, then your banana bread is done! If it comes out wet with batter, leave it in until the stick comes out clean.

Leave the Bread Out for a Few Minutes to Cool Before Serving
