Rose Pitha
Rose pitha - It is a Bangladesh sweet It is fully made with all purpose flour with milk,sugar and ghee.Its a deep fried one and finally soaked in a sugar syrup which gives a very delectable taste.It can be eat as a breakfast or evening tea time snack.Will share this detailed recipe below
Ingredients:
For dough:
1. All purpose flour - 1 cup + 150g
2. Milk - 1 cup + 1/4
3. Sugar - 2 tsp
4. Salt - 1 tsp
5. Ghee - 2 tsp
For sugar syrup:
1. Sugar - 2 cup
2. Water - 1 cup
3. Lemon juice - 1 tsp
4. Cardamon powder - a pinch
Making Dough
1.Take a non stick pan,set to medium heat flame
2. Pour 310 ml milk into the pan,wait for some minutes until it gets warm
3. Add sugar,salt,ghee
4. Mix altogether
5. Now its time to incorporate flour into it,slowly add the flour and mix it gently make sure there is no lumps
6. Stir continuously,Within a few minutes you will get that dough consistency and switch off the flame
7. Now cover it for 10 minutes
Making Sugar Syrup
1. Take a vessel,add 2 cup sugar
2. Add 1 cup water,cook in a medium flame
3. Now mix altogether,let it allow to boil for 10 mins
4. Now add 1 tsp of lemon juice in order to avoid crystallization
5.Add a pinch of cardamon powder (its optional)
6. Mix it well,keep it aside
7. Sugar syrup is ready
Making Dough Circles
1. After 10 minutes,take the dough out
2. Knead it well using hand,for about 10 mins so that it will be so soft
3. Now take a small dumpling from the dough
4. Sprinkle some flour in a counter-top so that dough will not stick
5. Place the dough,roll it gently as much thin as you can
6. Now take any medium size lid,and gently press it and make sure we need medium size circles
7. Now the medium size dough circles are ready
Prepare the 1st Rose:
1. Now overlap three medium size dough circles
2. Place it in a working surface
3. Now gently press it in a centre using finger
4. Take a very small ball from the dough,and place it centre
5. With the help of knife,mark three cuts(cut only outside portions) these will form rose petals
6.Now shape the rose,Now carefully lift a triangle and fold it around the center bud. Again take the second triangle and wrap it around the center bud again, it will partially cover the first petal also
7. Likewise, keep wrapping each triangle around the center bud, to get a full bloomed rose which shown in the picture
8. Finally rose petals are formed
9. 1 st rose pattern is ready
Prepare the 2nd Rose:
1. Now take six dough circles,place it like which i shown in a picture
2. Gently roll it from the corner,make sure don't need to roll it very tight and finally seal it completely
3. Now you will get a nice rose shape
4. Cut them into equal length with a knife,now you get a two rose
5. Now separate the petals little bit
6. Second rose pattern is ready
Prepare the 3 Rd Rose:
1. Take a thin rolled dough in a working surface
2. Now cut them into a rectangular shapes
3. Take them one out,Gently roll it to the corner which i have shown in a picture so that center part of rose is ready
4. Now do it similar as like 1 st rose part
5. Overlap three dough circles,gently press it center using finger
6. Now place this center rose part gently to the center,Cut three equal corners with the help of knife
7. Now carefully lift a triangle and fold it around the center bud. Again take the second triangle and wrap it around the center bud again, it will partially cover the first petal also. Likewise, keep wrapping each triangle around the center bud, to get a full bloomed rose
8. 3 rd rose is ready
Deep Fry:
1. Now all the three rose patterns were ready now its time to fry it
2. In a big pan,add enough oil for deep fry
3. Once the heats,drop the rose pattern one by one gently don't add too much at a time
4. Make sure cook in a medium flame
5. After 2 mins gently turn them to next side
6. Fry them well until it get nice golden brown color
7. Once its ready take them out to kitchen towel in order to remove excess oil
Soak in a Sugar Syrup:
1. Now its time to add them into a sugar syrup
2. Soak them for about 2 to 3 mins
3. Flip it well in a sugar syrup so that pitha's will coat well in a syrup
4. After 3 mins take them out on a plate
5. Do it same to the remaining batches
