Romesco - Pepper Sauce

Today we are making Romesco - an easy to make pepper sauce, originally brewed in Catalonia Spain.

Ingredients

since this is a pepper sauce we going to need peppers :)

- 4 peppers red and yellow

- 6 garlic clove

- 1 large tomato

- 1 slice of bread

- 1 tsp smoked paprika

- 1 tsp salt

- 1 tsp black pepper

- 2 tsp red wine vinegar

Roast the Peppers

Heat the oven to 210 degrees Celsius, place the pepper garlic and tomato in it . for 40 minutes ,

after 15-20 minutes once the garlic is completely soften remove the tomato and garlic from the oven. let it cool down and keep the pepper in the oven until you the are firmly roasted

Peel !

Peeling the garlic is pretty easy once its cool down...

for the pepper and tomato a neat trick is to put it inside a bag an let them sweat for a while. the evaporating water will make the skin peel of the body much more easily.

Cleaning the Peppers

Remove the seeds from the peppers and put all the ingredients in a food processor.

while mushing the sauce pour in the olive oil and the vinegar, take the slice of bread and put it in the toaster. try not to burn it...

slice the bread into small peaces and put it in the food processor. until you get a nice smooth texture.

Canning

Pour the sauce into cans. top it with olive oil and let is rest for a week in the fridge
