Rock Candy Cubes
My son wanted to make rock candy as a 4H foods project and the sucker molds we normally use were not available. So we came up with this low cost technique to make individual candies without the use of sucker molds or forms.
Prepare the Muffin Tin
Fill each mini muffin tin with powdered sugar. Find an object to press into the powdered sugar. We used the small glass flavoring bottle to make cubes. Then we had fun looking for other objects to make impressions with. We found a star pin that worked well.
Make the Syrup
1cup sugar
1/3 cup Karo syrup
3oz water
Stir these ingredients in a microwave safe glass Pyrex pitcher and microwave on high for 5 minutes.
Stir with the candy thermometer and microwave on high for another 3 minutes. You want to get the temperature to 280 but not over 300. Microwave in one minute intervals to 280 degrees Fahrenheit.
Let the hot syrup cool to 250 before mixing in the flavoring. Carefully pour the syrup into the impressions in the powdered sugar. Let it cool before removing.
You can sift the powdered sugar and reuse it many times.
